Easy Pot Roast Recipe

Ingredients:
3-4 lb (1.3-1.8 kg) boneless beef chuck roast
2 tablespoons olive oil (for searing)
1 large onion, quartered
3-4 garlic cloves, smashed
4 medium carrots, peeled and cut into large chunks
3 medium potatoes, peeled and cut into large chunks (optional)
1 cup beef broth (or more as needed)
1/2 cup red wine (optional, but adds great flavor)
1 tablespoon Worcestershire sauce
2 teaspoons dried thyme (or fresh if you have it)
2 teaspoons dried rosemary (or fresh if you have it)
2 bay leaves
Salt and pepper, to taste
Directions:
1. Prepare the Meat:
Preheat your oven to 325°F (163°C) if using the oven, or set your slow cooker to low.
Pat the beef chuck roast dry with paper towels. Season generously with salt and pepper on all sides.
2. Sear the Roast:
Heat olive oil in a large oven-safe Dutch oven (or a large pot) over medium-high heat.
Once the oil is hot, sear the roast on all sides until browned (about 4-5 minutes per side). This step adds flavor, so don’t skip it!
3. Add the Vegetables and Aromatics:
Remove the roast from the pot and set it aside. In the same pot, add the onion, garlic, carrots, and potatoes (if using). Stir the vegetables around to coat them in the oil and fond (the browned bits left in the pot).
