  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 8 oz white chocolate, melted and slightly cooled
  • 1/2 cup sour cream
  • 1/4 cup heavy cream

For the Blueberry Topping:

  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

 

Equipment

  • 9-inch springform pan
  • Parchment paper
  • Mixing bowls
  • Hand or stand mixer
  • Rubber spatula
  • Saucepan
  • Double boiler or microwave for melting chocolate
  • Cooling rack

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325°F (163°C).
  2. Line the bottom of a 9-inch springform pan with parchment paper.
  3. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  4. Press the mixture firmly into the bottom of the pan.
  5. Bake for 10 minutes, then remove from the oven and let cool.

2. Make the Cheesecake Filling:

  1. In a large bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the granulated sugar and beat until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in vanilla extract, sour cream, and heavy cream.
  5. Gently fold in the melted white chocolate until fully incorporated.
