Ingredients:
2 lbs ground beef (80/20 for juiciness)
1 cup breadcrumbs (preferably panko)
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
2 large eggs
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk
1 tablespoon olive oil (for drizzling)
For Serving:
Your favorite marinara sauce (store-bought or homemade)
Fresh basil or parsley for garnish (optional)
Grated Parmesan for serving (optional)
Directions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
2. Prepare the Meatball Mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan, parsley, garlic, oregano, basil, salt, and pepper.
In a small bowl, whisk together the eggs and milk until well combined. Add this mixture to the beef mixture and use your hands or a spoon to combine everything until evenly incorporated.
3. Form the Giant Meatballs:
Using your hands, shape the meatball mixture into giant meatballs—about the size of a tennis ball, or roughly 3-4 inches in diameter. This recipe should make about 6-8 giant meatballs, depending on the size.
Place the meatballs on the prepared baking sheet, leaving a little space between each one.
4. Bake the Meatballs:
Drizzle the meatballs with a little olive oil to help them brown and crisp up.
Bake the meatballs in the preheated oven for about 25-30 minutes, or until they are cooked through and browned on the outside. If you want to check for doneness, you can use a meat thermometer—the internal temperature should reach 160°F (71°C).
5. Serve the Meatballs:
Once the meatballs are done, remove them from the oven. If desired, heat some marinara sauce in a pan or microwave and spoon it over the meatballs.
Garnish with fresh basil or parsley and grated Parmesan, if desired. Serve with pasta, on a sub roll for a meatball sandwich, or with a side of garlic bread.
