  • 2 tbsp cornstarch (optional, for thickening the sauce)

  • Large skillet or Dutch oven
  • Slow cooker or roasting pan
  • Cutting board and sharp knife
  • Tongs
  • Measuring cups and spoons
  • Whisk (if thickening sauce)

Instructions:

  1. Prepare the Roast: Season the beef chuck roast generously with salt and black pepper on all sides.
  2. Sear the Meat: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the roast for 3-4 minutes per side until deeply browned.
  3. Prepare Vegetables: In the same skillet, sauté onions and garlic until fragrant. Add carrots and celery, cooking for 3 minutes.
  4. Transfer to Slow Cooker: Place the roast in a slow cooker (or roasting pan if using the oven). Add sautéed vegetables.
  5. Make the Sauce: In a bowl, whisk together beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over the roast.
